Malai kulfi has been perhaps the ultimate summer dessert of the country. A great malai kulfi is just perfection. A perfectly blended of guava or amrud ice cream with some extra malai, this kulfi is truly unique and a must try dish! The guava pulp is added to the milk mixture and then elaichi, or other dry fruits can be added. The sprinkled chilli powder on top almost takes to another world- and the experience of eating this kulfi is almost similar to eating a fresh amrud with the mirchi on the streets of your city.

The creamy, sometimes buttery and subtle avocado is actually a great flavor for a kulfi. It is usually paired with some mint. It is not as sweet as other kulfis, because avocado is actually a savoury ingredient. In some cases, to make it sweet, some elaichi is added. The avocado pulp is put into a blender and then added to the milk mixture for the actual kulfi. Some lemon juice is also added.
